- BILL'S TURKEY AND BLACK BEAN CHILI
- Rocky Mountain News, April 27, 1995

- 1 pound of ground turkey
- 1/2 to 1 cup of chopped onions
- 1 1-lb. 12-oz can of tomatoes
- 1 8-oz. can of tomato sauce
- 2 tsp. chili powder
- 1 tsp. salt
- 1/8 tsp. cayenne red pepper
- 1/8 tsp. paprika
- 1 15-oz can black beans (drained)

- Brown the ground turkey and onions in a large skillet. Drain off any fat. Stir
- in remaining ingredients except for the beans. Heat to boiling and then reduce
- heat. Cover and simmer about 2 hours, stirring occasionally.

- Add beans and serve as soon as they are hot.
